Jook sing noodles, also known as bamboo pole noodles, are a rare Cantonese noodle made by a traditional method that involves a chef bouncing on a bamboo log to knead the dough. This unique process gives the noodles a distinct elasticity and chewy texture, often made with eggs, flour, and alkaline water, and is considered a labor-intensive and dying art form.

PREPARATION
- - Stir-fry: Soak noodles in cold water for 10 minutes, drain and set aside. Stir fry the prepared ingredients until half-cooked, add the noodles and prepared sauce, stir fry until the noodles fully cooked to serve.
- - Soup: Put noodles in boiling water and cook for 2 minutes, stir it with chopsticks. Drain and put it into the prepared soup base to serve.
- - Dried-Mix: Put noodles in boiling water and cook for 2 minutes, stir it with chopsticks. Drain and mix it with prepared sauce to serve.
