PREPARATION
- - For convenience, this dashi soup is easy to prepare—simply add 1 bag (50g) to 2 liters of boiling water, and simmer for 10 minutes to yield 2 liters of delicious, natural dashi.
- - Dashi is an incredibly versatile base for many dishes, such as hotpots, noodle soups, simmered sauces, or miso soup when mixed with miso paste.
- - One of our favorite uses is in a rice cooker: replace water with dashi to cook Japanese rice, and just before it's done, add toppings like crab meat, corn, or mushrooms, allowing the steam to gently cook them.
